What Makes it Champagne, Anyway?

Monday, May 10th, 2010

Recently I received literature from Champagne Bureau of Washington, D.C., regaling me on all the ins and outs of champagne. This organization is fighting to keep the name of Champagne protected; to keep sparkling wines that aren’t actually Champagne from using the name.

Location
According to Champagne Bureau, location is the difference between Champagne and any other wines. Champagne only comes from the Champagne region of France, located 90 miles northeast of Paris, in an area that covers less that 80,000 acres. The characteristics of the Champagne region create a very specific terroir that cannot be recreated anywhere else on Earth; geographic location is matched with harsh climate, chalky subsoil, erratic sun and a limited harvest.

Quality Control
Only three grapes have been allowed to grow in Champagne since 1927: Chardonnay, Pinot Noir and Meunier. Standards have also been enforced for pruning, height, spacing and density of the vines, to ensure the ability to harvest by hand. Strict regulations are enforced all through Europe to cover all stages of Champagne’s production, from cultivation to bottling. Every single step of the process, from the way to grow each of the three grape varieties, to the positioning of the vines, to the method of winemaking and its aging process, to the demarcation of the vineyards, is strictly controlled by French law.

Next time you’re browsing the store shelves for a bottle of Champagne, keep an eye out for American versions that might be attempting to utilize the Champagne name, erroneously. If straight-up sparkling wine simply won’t do, make sure to pick up a bottle of bubbly from none other than the Champagne region itself.

To date, 13 of the world’s most renowned wine regions have signed a declaration to protect winemaking location names:

  • Champagne
  • Chianti Classico
  • Jerez/Sherry
  • Napa Valley
  • Oregon
  • Paso Robles
  • Port
  • Sonoma County
  • Walla Walla
  • Washington
  • Tokaj
  • Victoria
  • Western Australia

Cheers!

Confessions of a Cocktail Waitress

Monday, May 10th, 2010

*Disclaimer: Although loosely related to golf, this post has nothing to do with Tiger Woods.

While I was in college, I worked as a waitress at a country club. The first summer I worked there, I didn’t even wait tables – just delivered cocktails. I’d travel from the bar in the clubhouse’s grillroom to the outside terrace with as many drinks as I could fit on my little tray.

Being that this was a private golf club and class act establishment, we never served a drink that wasn’t carried on a tray and we served them all with cocktail napkins, while wearing a skirt. It doesn’t sound like a very difficult task but when you’ve got martinis filled to the top, wine glasses, rocks glasses, highball glasses and bottles of beer all on the same tray, it takes some skill to carry them without sloshing (that’s why cocktail waitresses hate when you order martinis!)

You also have to make sure that you serve the cocktails in a strategic manner. If the weight on the tray becomes imbalanced, the tray tips and your drinks fall. They don’t fall very gracefully either. I know this because I learned it the hard way when I dumped a large glass of red wine on an important man wearing a very nice suit. My point here is that serving drinks is not as easy as it looks. Everything that restaurant and bar managers can do to make cocktailing easier for their staff is always appreciated.

We had a variety of trays available to us but the other waitresses and I used to fight for the cork lined ones. If you happened to put one down, you’d lose it – so we carried them around with a tight grip. Why? It’s simple. The cork keeps the drinks from sliding around and your chances of both sloshing and slipping are significantly reduced.

Cork Lined Serving Trays

I feel compelled to urge anyone who supplies drink service items to take this into consideration and buy the right trays. Your servers will be much happier, your drinks will stay where they belong and all will be well in the world.

Beer Pong Baseball

Friday, May 7th, 2010

Beer-Baseball is a drinking game in which players shoot a beer pong ball across a table and try to land the ball into one of 4 cups of beer on the other end.

Beer Pong Vixens Table

The game consists of two teams of even numbers, one team stationed on each side of a table, and 4 cups set up on each side. The cups are lined up in a straight line, representing the bases, with the last cup at the edge of the table.

When a ball lands in a cup, the defending team must drink all of the beer inside that cup and all the cups below it, i.e. if the third cup is hit, a triple, the third, second and first cup are drank as well.

The cups are filled according to their position on the table. The cup closest to the opposing team is ¼ full, the second cup is ½ full, the third cup is ¾ full and the last cup nearest the edge (by the home team) is completely full. You should also have an extra cup filled with water, so you can wash the balls between tosses. After drinking, the cup is refilled to its original level and placed back in line, on the table.

The game consists of nine innings in which each team gets to "bat." If a ball is thrown and does not land in a cup, this is an out; each team gets 3 outs per inning. The team with the greatest score after nine innings is considered the winner. The game can also be played using "little league" rules in which the game is over after 6 innings.

Brasserie Dieu Du Ciel! Rosée d’Hibiscus

Friday, May 7th, 2010

Tonight I had my very first beer brainstorm with the man behind Lost in the Beer Aisle. Essentially we meet at a specified time on chat and pop open the same beer together for a review. Fun concept that I look forward to doing again (thanks Josh!).

I popped out to Premier with list of brews queued up in his fridge so I could choose one that (a) was available and (b) looked wicked interesting. Brasserie Dieu Du Ciel! Rosée d’Hibiscus was it.

Brasserie Dieu Du Ciel! Rosée d'Hibiscus

This 5% ABV spiced Belgian wheat poured a cloudy, ruddy rose brown with a head that fizzled out, dissipating super quickly. Its aroma was of raspberries, pink grapefruit and flowers (I assume from the hibiscus).

Rosée d’Hibiscus’ body was extremely light and fizzy, with a flavor so subtle that it was almost like drinking super watered down, fizzy juice. Josh put it perfectly when he noted it was like lightly flavored seltzer water. Really disappointed, honestly – with the aroma and cloudiness I would’ve thought there be more to the palate but unfortunately, it’s quite lacking. I could barely even taste the wheat!

If I had to define one beer on earth as a lawnmower beer, it would be this one.  The taste is so, so light that I really feel more like I’m drinking fizzy flavored water than beer.  I thought maybe there would be some nice Belgian yeast action, since it was so cloudy, but in all honesty, it was quite a let-down.

I would never buy this again but if someone offered it to me after I spent 18 hours in a desert, I would be eternally grateful.

The Bigger They Are, the Harder They Fall

Thursday, May 6th, 2010

Anheuser-Busch InBev, the world’s largest brewer, saw profits fall 34% so far in 2010, according to Associated Press. This drops their profit to $475 Million as of Q1. Craft beer sales, however, are projecting to continue to rise through the year.

Boston Beer, makers of Sam Adams, for example, have seen an increase in sales of 16% in Q1 this year. That brings sales to $94 Million, according to Reuters.

Cheers to Boston Beer and the microbrew industry as a whole; beer sales around the world have fallen stagnant yet the companies that are seeing increased profit are the little guys. I don’t know about you, but that makes me feel warm and fuzzy inside.
