Soon to debut (think June), the next beer up in Brooklyn Brewery’s Brewmaster’s Reserve series is The Tonic. As reported in beernews.org, this newest addition was inspired by a cocktail created by Sam Ross at NYC’s Milk & Honey. Sam Ross even came to Brooklyn Brewery to help brew the new beer and capture his cocktail’s full flavor profile.

The influencing cocktail is called the Penicillin, and it’s made up of Scotch, ginger infused honey and fresh lemon juice. As Brooklyn Brewery puts it, "it’s an improbable blend, but it’s delicious." Since the government wouldn’t let them call their newest Brewmaster’s Reserve ‘Penicillin,’ they’re going with The Tonic, which seems quite fitting.
What’s going into this brand new brew?
Malts
English Peat Smoked Malt, English Pale Malt, German Pilsner Malt
Hops
Willamette, Cascades, Fuggles, Kent Goldings, Simcoe, Citra, Sorachi Ace, Amarillo
Additions
Dried lemon peel, minced ginger, NYS wildflower honey, organic sicilian lemon juice
Brooklyn Brewery will begin to ship kegs of The Tonic during the last week of May. Keep an eye out at your local pubs!
