Elizabeth Karmel loves a good margarita, and the colder the margarita, the better. She came up with this ingenious recipe, which can definitely be adapted to incorporate different cocktail flavors.
Ingredients (for about 8 pops)
½ c fresh lime juice (about 5 to 6 large limes)
Juice of 1 large orange (about ½ cup)
¼ c filtered water
¾ c tequila
¼ c triple sec
Pinch of fine-grain sea salt
2 – 4 tbsp powdered sugar (to taste)
In a pitcher, combine all liquid ingredients and the salt. Stir well, then add the powdered sugar (1 tablespoon at a time), stirring well between additions. Taste to determine your desired sweetness, then continue stirring until the sugar is completely dissolved.
Fill the pop molds, stopping about a half-inch from the top. The liquid will expand to fill the sleeve as it freezes. Put the popsicle handles in place and freeze overnight.
