Celebrate World Cocktail Day with Cocktail Popsicles

Did you guys know that today is World Cocktail Day? As I thought about a way to incorporate this holiday into a blog post, I struggled a bit. I could show you a bunch of our cocktail products, give you some standard drink recipes, or just explore the origins of the holiday, but I wasn’t really feeling any of that. I wanted something that would make your mouths water. I mean, it’s World Cocktail Day after all.

So that’s when I thought about poptails. Have you heard of them? Cocktail popsicles. They’re amazing.

Endless Simmer has over 30 recipes, and the imagery alone will make your mouth water. I’m going to highlight two of my favorites (the Watermelon Mojito & Mixed Berry Gimlet) in this post, but if you’re interested in seeing more, head on over to the Endless Poptails page. Watermelon Mojito Popsicles
(Makes about seven 4 oz popsicles)

Ingredients

8 oz watermelon juice (2 ½ cups chopped watermelon)
2 oz fresh lime juice
8 oz light rum
14 oz club soda
1 oz simple mint syrup

Preparation Instructions

1. Place chopped watermelon in a food processor or blender and process until watermelon is juiced (will be slightly pulpy).

2. Combine watermelon juice, lime juice, mint syrup, and rum in a cocktail shaker and shake well.

3. Fill popsicle molds ¾ of the way up with mixture. Fill remaining space in popsicle molds with club soda and stir to combine.

4. Freeze for about two hours, then insert sticks and freeze again for up to five hours (or until the molds are completely solid). To release popsicles, run hot water on the outside of popsicle molds for 2-3 seconds.

Mixed Berry Gimlet
(Makes about six 4 oz popsicles)

Ingredients

16 oz limeade
6 oz dry gin
¾ cup raspberries
¾ cup blueberries
¼ cup blackberries

Preparation Instructions

1. Place limeade, raspberries, blueberries, blackberries, and gin in a food processor or blender and process or blend until pureed (about 1-2 minutes), then strain the mixture.

2. Pour strained mixture into popsicle molds, freeze for about two hours, then insert sticks.

3. Put the molds back in the freezer for about five hours (or until the molds are completely solid). To release popsicles, run hot water on the outside of popsicle molds for a 2-3 seconds.
