Feeling the Thaw: The Mixed Muse

Fever Tree Bitter Lemon MixerWe’re still in the middle of February but these last two days have been unseasonably warm for Buffalo (nearly 50°F) and, although we’ll be returning to colder temperatures by tomorrow, I’m feeling inspired by this momentary thaw. So inspired, in fact, I’ve got a hankering for a springtime cocktail.

Mixed Muse
1½ oz absinthe
2 oz pineapple juice
6 – 8 mint leaves
Lime wedge
1 tsp simple syrup
Fever Tree Bitter Lemon

Toss mint leaves into a shaker with simple syrup and lime wedge. Muddle well. Add absinthe then fill halfway with ice and add the pineapple juice. Shake it up well and pour the whole thing into a highball glass, making sure to include the mint leaves and lime wedge. Top with Fever Tree Bitter Lemon and enjoy.
