The holiday cheer is seeping into every step we take lately it seems, even at work. Today, for example, our fearless leader hand-prepared, for every interested employee, a toasty mug of hot buttered rum. Perfect for evenings spent fireside, or even in front of one’s computer at work, as the case may be, this is one holiday cocktail treat you must try and share. It’s so easy to make, we even tossed around the idea of filling a massive crockpot with batter, solving the winter party "which cocktail should I make?" dilema once and for all.
Hot Buttered Rum Batter
Serves Approximately 20
1 lb light brown sugar
½ lb (2 sticks) unsalted butter, softened
2 tsp cinnamon
2 tsp nutmeg
½ tsp allspice
2 tsp vanilla extract
In a mixing bowl, beat together all ingredients until well combined. Refrigerate in an airtight container for up to a month, or place in freezer until you’re ready to use.
*Hint: it’s best to make the batter in advance so that all of the spices have a chance to mingle. Just be sure to remove the batter from the fridge at least 6 hours before you plan to serve, to give it time to soften.
To Serve Hot Buttered Rum:
In a pre-heated mug, combine 2 heaping tablespoons of batter with 1½ oz of rum. Top with boiling water, stir and enjoy.
