During my travels to Chicago and the Goose Island Brewpub in Clybourn, I had the opportunity to sit down and chat with Jared, their head brewer, about Heartwood Symposium Ale 2010. This year’s limited collaboration brew was a blend of four completely different beers; a Scotch Ale, a Russian Imperial Stout, a Barleywine and an Imperial IPA, all of which were aged in Woodford Reserve bourbon barrels before blending. Finding the right blend, of course, took quite a bit of time with so many incredible brewers and opinions, but I’d expect nothing less.
