4 pounds corned beef brisket
1 cup brown sugar
1 12-ounce can of Guinness
Preheat oven to 300º
Rinse beef completely and pat dry.
Place brsiket on rack in roasting pan or Dutch oven.
Rub brown sugar onto beef, coating the entire brisket, including the bottom.
Pour Guinness around and gently over the beef to wet the sugar.
Cover and place in preheated oven to bake for 2½ hours.
Allow to rest 5 minutes before slicing serving.

2 oz Jameson Irish Whiskey
1 oz peach liquor
1 oz blue curacao
Orange juice to taste
Add all ingredients to cocktail shaker.
Shake with ice, strain and serve in a rocks glass.
Decorate with an orange twist.

¼ oz green creme de menthe
2 oz heavy cream
Add all ingredients to cocktail shaker.
Shake with ice, strain and serve in a rocks glass.
Garnish with a maraschino cherry.

6 oz lime Jello
2 cups boiling water
2 cups vodka
24 paper shot cups
In a bowl, mix Jello with boiling water.
Stir until dissolved.
Add vodka and mix well.
Pour into paper shot cups.
Refrigerate until firm.

1¾ pint Guinness Stout
½ shot Bailey’s Irish Cream
½ shot Jameson Irish Whiskey
Pour Guinness into a pint glass and let it settle.
Float Bailey’s on top of Jameson in a shot glass.
Drop shot glass, carefully, into Guinness.
Drink quickly, before it curdles.

1 cup whole milk
1 pint green mint chocolate chip ice cream
1 tps pure mint extract
3 tbsp dark rum
Mint sprigs, for garnish
Put milk, ice cream, extract and rum into a blender.
Blend on high until smooth, about 15 seconds.
Pour into 2 chilled glasses.
Garnish with a sprig of mint.

Freshly brewed coffee
½ oz orange liqueur (recommended: Cointreau)
½ oz Irish whiskey
Whipped cream
Créme de menthe
Fill a mug most of the way with hot coffee.
Stir in orange liqueur and Irish whiskey, to taste.
Add a dollop of whipped cream.
Drizzle with créme de menthe.

½ shot Bailey’s Irish Cream
½ shot Frangelico
Pour equal amounts of Bailey’s and Frangelico into a shot glass.
Enjoy.

2 ½ oz milk
½ oz amaretto
Edible green and gold cake decorating powder for garnish
Pour ingredients into a cocktail shaker with ice cubes.
Shake vigorously.
Strain into a chilled cocktail glass.
Sprinkle green and gold powders for garnish.

½ shot triple sec
Splash of orange curacao
Juice of 2 limes
Pour all ingredients into a shaker filled with ice.
Shake until frothy.
Strain into a chilled cocktail glass.
