Thyme for Fall: A Cocktail Recipe

Bittermans Xocolatl Mole BittersThis morning,  I was greeted with my first cool, crisp gulp of air of the coming season. I pulled on a pair of skinny jeans, my new fall boots, a cozy wrap sweater and thought to myself; “Self, it’s about time for an autumn cocktail.” Lo and behold, I happened upon this one at the calgaryherald.com and absolutely had to share. You’re welcome.

As Thyme Goes By
2 oz single malt scotch
¾ oz Clement Creole Shrubb
½ oz Benedictine liqueur
1/3 oz simple syrup
1 tsp fresh thyme leaves
3 dashes Bittermans Xocolatl Mole Bitters
Ginger beer, to taste
Sprig of thyme, for garnish

Add all ingredients, except ginger beer, to an empty cocktail shaker. Dry shake first, then add ice and shake well for about 15 seconds. Double strain into a Collins glass filled with ice. Top with ginger beer and garnish with a sprig of thyme.
