The orange bitters are slowly aged inside genuine Old Tom gin barrels, which adds piney juniper and other botanical notes to the mix. The aromatic bitters spend time in used whiskey barrels--a process that imparts woody complexity, notes of cinnamon, vanilla, pepper, and char. The barrel-aging helps to marry the bitters' flavors for a softer, rounder profile.
