After the sap is collected and boiled down to syrup according to Wood family tradition, it spends four to six months in used rum barrels from Mad River Distillery. In that time, the syrup absorbs the nuanced flavors trapped in the barrel walls, including notes of oak, char, vanilla, spice, and, of course, rum.

    The result is a rich and decadent sweetener that works just as well on pancakes, waffles, fruit, and desserts as it does in cocktails. Try it in a daiquiri or rum old fashioned and find out for yourself the difference a little age makes!
